My Mom’s Potato Salad  (It’s the best)
 

Ya know — several people sent me similar standard potato salad recipes, each exclaiming that it was their Mom’s recipe and therefore “the best”.  Well, I appreciate all this family loyalty and such but ya know, I wasn’t really looking for a standard potato salad recipe, ‘cause I already had MY Mom’s — and it is , of course, “the BEST”!  So here you go, the family secret:
10-12 potatoes, boiled, skinned and diced
1 large or 2 medium chopped onions
5 stalks celery, diced
1/2 cup mustard, yellow (bottled)
1 1/2 cup mayonnaise and/or sour cream
1/3 cup sugar
1/2 cup pickle relish
1/2 cup green salad olives, diced
1 Tbsp. sweet pickle juice
12 hard cooked eggs (8-9 diced in salad---slice the rest as garnish)
salt and pepper to taste


Mix well.  Sprinkle with paprika for color.  Chill several hours or overnight.  Serves 6-8-10.

Ariane’s “What’s in the Fridge?” Sandwich
 

leftover boiled or baked spudado (pronounced at will)
2 slices of good, nutty fresh bread
an adequate smear of mayonnaise
a sneeze of mustard
raw or pickled onion slices
a hefty slice of oozing tomato
a fine rain of Tamari


Assemble whilst humming an appropriate tune (eg. “I’m a lonely little petunia”)
Eat mindfully.
